Discover the traditional (and not so traditional) cuisine of Vietnam on this culinary highlights itinerary. Arrive into Hanoi in the north of Vietnam, home to some of Vietnam's most recognisable dishes, including pho - a rice noodle soup commonly eaten for breakfast. Indulge yourself during a street food tour of the Old Quarter and surrounding markets, during which you'll taste various Vietnamese dishes as well as French pastries and French-influenced snacks.

Head out into Halong Bay for a leisurely cruise among the limestone karsts, where you will not only have the chance to relax and enjoy the scenery but will also try your hand at squid fishing. Here you'll taste some of the region's finest seafood, served up by the chef on board.

Fly to Hue, the home of the unique royal cuisine of the Imperial dynasty era. You will learn to cook rich and sometimes spicy local delicacies at one of the city's traditional garden houses, learning about the history of the region as you cook.

Drive along the Pass of Ocean Clouds to Hoi An, where you will spend time with Chef Duc and enjoy a private cookery experience from this eclectic and internationally influenced chef. You'll also spend time in a local restaurant, learning how to make pho using traditional methods, right down to making your own rice noodles from scratch.

Head south to Ho Chi Minh City for an evening tour of the city's late-night eateries and street food, all whilst riding pillion on the back of a classic Vespa. Explore the local "wet" markets and pick up some freshly prepared seafood, together with the traditional accompaniments of spicy mango salad, quails eggs and corn on the cob.

Spend the day in the Mekong Delta, Vietnam's largest rice production area, for an insight into the local farming and fishing as well as small cottage industries specialising in the production of rice paper, popped rice and coconut candy.
