An Introduction to Laos Cuisine

Much like the country itself, Lao cuisine remains somewhat of a mystery to most outsiders. Here's your chance to discover its secrets!

Lao cuisine relies heavily on fresh produce and incorporates a range of intriguing and often unfamiliar flavours. In many ways it's similar to that of the Isaan region of northeastern Thailand.

For this morning cooking class you will be in the expert hands of two chefs from the top-class Hotel De La Paix, and the location is unbeatable: beside the spectacular turquoise waters of the Kuang Si Waterfalls.

The lesson begins with a visit to the local market, where the chefs can introduce you to the ingredients you'll be using. Next you'll drive out of town with your freshly acquired produce, zipping through beautiful landscapes of rice fields, hills, and small villages to reach the waterfalls, where the necessary equipment will be set up and ready for you in a peaceful spot.

On arrival you'll watch as the chefs demonstrate how to prepare authentic Lao dishes, then you'll get a chance to try it yourself. Slice and pound your way through the ingredients before cooking each dish in the traditional way. After a few hours of concentration and smelling all of the wonderful flavours, you'll tuck in to your creations for a memorable lunch by the waterfall.
